Basic Preparation Of Foods: Dairy Produce.

CHEESE.

Cheeses are manufactured from milk which has been naturally or artificially turned sour. The first method is achieved by standing the milk in a warm place and allowing natural, beneficial bacteria to convert the milk’s natural sugars into lactic acid. The second method is effected by adding an agent, usually rennet.

Colouring and salt are usually added too. The whey is then drained off and the curds are pressed into moulds where they are ripened or cured. Some cheeses are subjected to pressure; soft cheeses are not. Curds are ripened or cured by a variety of means. The method, the quality of the milk and its pasture, the breed of cow, sheep or other animal and the type of bacteria all govern the final product.

Some local environmental conditions are unique and those areas are capable of producing cheeses that are not successfully copied anywhere else: for instance Roquefort and Camembert, although factories do attempt it. Some even have a measure of success: remember that most of the world’s Cheddar cheese now derives from the United States and Canada.

The constituent parts of cheese are roughly: 33% fat, 33% protein and 33% water with salt, colouring, sugar etc making up the other 1%. These proportions do vary from area to area as some manufacturers use full cream milk, others skimmed milk and yet others add extra cream. Yet others add extra sugar, although most do not. All cheeses have a high calcium content and can be considered ‘concentrated milk’ and stored in the same way.

Many people say that cheese should not be kept in a fridge and although storing in water, as for milk, is not an option, a cool larder is definitely ideal. Try the traditional method of hanging it up in cheesecloth in a cool, breezy place. If the weather is hot, dampen the cheesecloth with water to which a little vinegar has been added.

Cheese is often served in Europe with a salad or/and bread and is often presented after or instead of the sweet. Hard cheese can be difficult for children to digest and grating it first will make it more palatable to them. Once grated the cheese can be scattered on vegetable or fish soups or sauces; added to egg, pasta, rice and oatmeal dishes; put on baked potatoes or pastry; toasted on bread or put in salads and sandwiches.

How To Cook Cheese: A not well known fact is that a lot of people find cooked cheese indigestible. The reason lies in its molecular structure. Here is why: cooked starch can be digested by the saliva in the mouth but other foods must pass to the stomach or intestines for this process. They are, however, broken up in the mouth. Digestion of protein begins in the stomach and is completed in the small intestine, while fat is not rendered soluble until it reaches the small intestine.

Cheese possesses a high fat and protein mixture, but in melting, the fat often covers the protein and prevents the digestive juices reaching it in the stomach. Therefore, its digestion is delayed until the fat has been absorbed in the intestines. Cheese can be rendered more digestible by:

a] Cooking it with some starchy foodstuff, since the starch will absorb the fat, not allowing it to cover the protein.

2] Using seasoning: Cayenne Pepper or mustard will irritate the intestinal lining, causing the release of extra digestive juices.

3] Cooking rapidly at high temperature. This stops the protein from becoming tough and stringy and so, harder to digest or you could add cheese to sauces late in the process.

4] Adding an alkali: for example, a generous pinch of Bicarbonate of Soda per 3 ozs (75g) will help neutralize the fatty acids and make the proteins easier to digest.

September 1st, 2010Our Home Movie Theater System

It all started about nine months ago, when my wife and I decided it would be a good idea to modernize our home. It took a lot of talking about because neither of us genuinely wanted to take the job on as we both have active business lives. However, one Sunday afternoon, I took the bull by the horns and started to strip the paper off the walls and the ceiling in the kitchen. My wife soon joined in.

It took us a month to finish it, because we only had Saturday afternoons and Sunday, but we found that we enjoyed the physical work, we both have desk jobs, and we really enjoyed working and planning together. It was a new but pleasing experience for us.

So, on the day we finished, we cooked a special meal and laid the table by the book. After the meal, we sat down to watch a film on TV. But neither of us had been able to do that for a month and we both felt restless. My wife said something like: ‘Wouldn’t it be nice to have another project to do?’ and I think we both had the same idea at the same time.

The spare bedroom! Well, our kids had families of their own now, so we essentially had three spare bedrooms. We decided to turn one of them into a home theater. Neither of us particularly liked watching TV, but we both liked films which are normally ruined by too much advertising.

We went up to the smallest room, but it was too small so, like Goldilocks we went to the next, but ended up in the largest room, so that we could entertain friends or family too. Neither of knew what to do next about the home movie centre, but we knew that we could clear the room out and measure it, which is what we did. All the furniture went into the garage until the charity shop could take it away and we went to the Internet to get assistance.

There was tons of guidance on websites and in articles and we soon felt confident enough to take the project on. We transferred the dimensions of the room in scale onto a sheet of paper and drew in where the screen would go and where we would be sitting. The space left between us and the screen would be about 15 feet.

We had read that the best viewing distance is between three times and five times the diameter of the screen, so we could choose a screen between sixty inches and 36 inches. Being in our fifties, we though we would make it easier on our eyes and opted for a forty-eight inch plasma screen.

We ordered that from the Internet. We had also read that the Xbox was a first-class double as a DVD player and we knew that our grandson was always on about one, so that was next. We were a bit stuck with the speakers, but my brother could help me on that one. We had about a week before our equipment would arrive, so we determined to redecorate in the evenings.

Once complete, we installed all our equipment with my brother’s help and we were off. At first we used a couple of sun loungers as seating, but we fairly soon got two delightfully comfortable reclining chairs and two couches for visitors. We may upgrade those later and put in dimmable lighting too, but for now we are very pleased with our home movie system and so is our grandson.

August 26th, 2010Speakers And Home Theater

When most people are looking for a sound system, they usually go directly to the speakers. This is not of necessity wrong, but you must not stop there. The speakers are an important part of a sound system, but they are not the be all and end all.

It also essential to think about the player and the amplifier, because any sound system is only as good as its weakest constituent. Another important topic is the positioning of those speakers. It is just as important to position your speakers correctly as it is not to buy cheap speakers. There are also misconceptions about size. Bigger is not always better.

In the past, it was often the case that bigger meant better, but now often the reverse is often the case. Technological advancement has been concentrated on producing smaller speakers, that will take up less room in our smaller houses and smaller cars. Therefore, the smaller speakers are often the most technologically advanced.

If you are going for surround sound, which is the best available today, then you will also have to think carefully about placement. That is the positioning of the speakers. In a typical 5.1 surround sound home theater, you will have six speakers: five ordinary speakers and one sub-woofer.

These speakers would be set out one to the far right of the screen and one to the far left of it and one underneath it. The other two speakers would be at the rear of the audience, but not so far apart as the front speakers. The sub-woofer can go in the centre at the front or the rear.

For smaller rooms, a 3.1 surround sound system might be adequate, that is you leave out the rear speakers. For a larger room, you may want either a 6.1 or 7.1 system. The 6.1 has the rear row of speakers matching the front row, while the 7.1 has an extra middle rear speaker.

It is best if you can buy all your speakers at the same time from the same manufacturer. Obviously, they all have to match each other and the amplifier. The output from the amplifier has to match the capabilities of the speakers or you risk blowing them. That is, giving them more power than they can cope with, which causes too much vibration and permanent damage to the speaker’s internal components. Everyone has heard blown speakers, they sound awful.

If you can not afford to get all your speakers at the same time, buy a famous brand and a late-ish model, so that you can get more of them when you can afford to. Do not go for end of line speakers, because they are discounted, unless you can buy all the speakers that you will ever need for your system.

Buy your speakers online, if that gets you the best deal, but you really ought to hear speakers like the ones you are buying in action, before you make up your mind. You could also take your Internet price to the local dealers and ask them to match it. They might, you never know and it will save you postage too.

August 21st, 2010Astronomy For Beginners

Although astronomy is the oldest science, it continues to be at the forefront of not only scientific thought, but that of the public at large too. Who has not looked up at the galaxy while walking home late at night and wondered? Having said that though, the ancient people of certainly the northern hemisphere, but probably both, knew the movements of the stars and planets better than most of us do nowadays.

They understood then, thousands of years ago, that the majority of stars appear to rise in the Eastern skies at night and travel on circular paths. They also noticed that some ’stars’ were ‘wanderers’ (we call them planets) and that sometimes they went ‘against the flow’.

They also named groups of stars that we now call constellations or even galaxies and knew that those visible in the winter were different from those seen in the summer.and that others were visible all year round. The average common man of 5,000 – 10,000 years ago almost certainly knew more about the movement of the heavenly bodies than the average common man of today does. (I mean men and women here, naturally).

They learned how to calculate or at least locate the extremities of the sunrise and went to extraordinary lengths to mark those points with massive stone structures, such as Stonehenge in the UK, probably to facilitate the location of certain positions of the sun or other planets or stars, which may have been important to their religious beliefs or crop cycles.

In 1609, Galileo invented the first artificial device for studying the stars and planets. It was the first astronomical telescope and through it he was able to observe objects millions of miles away that no person had ever seen before. Because of the deductions he drew from his observations, he clashed with the Roman Catholic Church and was often in serious danger for his life, so radical were his discoveries.

But humankind was not to be intimidated, and since then we have gone on to build ever bigger and ever better astronomical telescopes through which we can even detect radio waves, microwaves, X-rays, infrared waves and gamma waves from outer space. Forty years ago, we even travelled to our Moon. and we have sent rockets to eight of the nine planets in our Solar System, as well as to quite a few comets and asteroids.

Where will we go next? That decision was always up to the government of the USA and the old Soviet Union, but now there are other players in the field. What will China or India want to explore with their possibly slightly different outlook on life? Or will it be just a question of financial benefit?

The world may be in a state of change and power may be shifting from its traditional seats in the West, but it has not lessened interest in questions that scientists think can only be answered in space. These are exciting times for the science of astronomy, but then man has always found astronomy exciting.

Would it not be lovely, at the end of a hard day’s work or on your day off, to relax outside on your patio deck? It is a dream that many people have. But it does not have to be only a dream. You could be really doing it within a few of weeks. You can either make the deck or patio yourself, if you are useful with your hands or you can get someone in.

The best thing to do is talk with your contractor about your plans about size and materials. If you want to have a go at making it yourself, take the dimensions to your local builders’ merchant and get them to give you a price. If you need it, they can normally recommend a contractor to you. This can be a good idea, even if it is only to get an idea about price.

There are also plenty of ’standard’ plans available too. You could get a few gardening magazines, you will be able to tell the ones you want by their titles. You could also look online. There is also designing software for this sort of project, it just depends what you want your input to be.

You could just hand the whole task over to your builder, if that is what you want. However, I would go for a drink with my wife and take paper and pens. Over a drink or two, I would encourage us both to make a few sketchy plans of what we would like. Then you can chat about and amalgamate the designs.

You also have to come to a decision whether you want a raised deck or one at ground level. A raised, wooden deck might help keep the snakes at bay, but a stone patio places you right in the middle of your garden and flowers.

A consideration, depending on where you live, could be the use of patio heaters. If you think that you may have to use patio heating at various times of the year because of the weather, you might not want your patio deck made of timber. After spending time and money on your new patio deck, you will want to make use of it whether it is a bit chilly or not, which is where the heaters come in.

Furthermore, patio heaters are not that pricey any more and not that dear to run. If you add a mosquito trap and some lighting, you will have a pleasure to enjoy for the rest of your life.

August 17th, 2010The Perfect Barbecue

The three most essential elements of any barbecue party are the guests, the weather and the food. I can not make recommendations about your friends and family, you are on your own there, but I hope you will find my suggestions for the other two fronts practical.

An unplanned party in the garden is great and often the best parties are the ones that just happen off the cuff, but if you want something a little more formal or more notable then you have to organize. The first step is to pick a date far enough in the future for most people to be unlikely to have a prior engagement, but not so far that they might forget about your barbecue party.

Depending on where you live of course, try to pick a date when it is unlikely to be cool or wet. This is hard in places like the UK, but may be simpler where you live. If the party goes on into the night it may get cool anyway and you could hire a few gas patio heaters in advance just in case. You could also have a sunshade or sheltered seating area in case of blazing sunshine or a light shower.

These days a lot of people are vegetarian and you will have to plan in advance for them and other dieters, if they make up a sizable number of your guests. You could send out RSVP invitations and ask your guests to make known any special dietary demands. I am not really suggesting that you have to cater to everybody, but if you have a lot of Jews or Arabs coming you will need to provide an alternative to pork chops and of course there are other minorities too.

In fact, you may have to do some research on the religions of the people coming to your barbecue party, because often cooking utensils may not have touched pork of meat or shellfish. Most people of the guests with these dietary requirements will have been in this situation before and will understand if you go some way to providing an alternative.

For this reason, you will need to get your RSVP cards back at least a week before your barbecue party and do a bit of research on the telephone or the Internet. Then start making up the barbecue side dishes. These should include baked or and boiled jacket potatoes and potato salad, baked beans, egg quarters and coleslaw along with pickles, relish, onions, chutneys tomato and curry sauces (hot and not so hot), as most people will eat them. These can be prepared a few days in advance and kept in Tupperware containers in the fridge. Bread in the form of buns is also essential so that people can make sandwiches.

It is imperative for a polished act, to have your party area fully prepared before your guests turn up. it is a good idea to set the music system up in the garden shed or the garage to save it from any sudden shower. Provide plenty of tissues for wiping greasy fingers and plenty of receptacles for the debris. Finger bowls with lemon water would be a good idea for this purpose too.

August 13th, 2010Patio Garden Furniture

If you have a lovely patio or deck or a beautiful garden, then you need to have good patio furniture in order to get pleasure from it. There is no finer end to a busy day than sitting outside on the patio with a drink and a newspaper or a book. I like to sit in the garden after the sun has weakened a little, but before the mosquitoes come out, for a few hours reading a book.

There are many different styles of patio furniture to choose from that range from classic to modern. There is also a full range of choice in that there are chairs, loungers, swinging sofas, tables, outdoor fridges, barbecue sets and patio heaters amongst other things. A full set need not cost more than $1,000, but you can start with a table and two chairs and build up your patio furniture set step by step.

The many choices you have when looking for patio furniture are the style and the material it is made from. Most patio furniture stays outside all day and all night in any weather, so it important to get furniture that is well-made and weather-proof. All weather furniture is usually made from plastic-coated steel, wicker, massive wood or moulded plastic.

Whatever you pick, make sure that the guarantee makes your choice worth the money. For example, I mean, if the furniture costs $200, and has a 12 month warranty, then you should be prepared to pay $4 a week for your investment and everything else is a bonus.

Another tip is to buy your patio furniture from a reputable manufacturer or a reputable retailer, unless it is massive timber furniture in which case you will want a reputable local craftsman. It depends where you live of course, but any patio furniture is going to have a hard time of it and it will remain outside sometimes no matter what your intentions are now.

Standard plastic patio furniture is pretty good and will stand up to all but the coldest of weather, which can make it become brittle. Prolonged exposure to high temperatures can have the same effect on cheap plastic chairs. White is the usual colour, but there are others. Make sure that you buy something that will take your weight, especially if you are a bit on the heavy side. I have had legs of plastic chairs go on me, but luckily I was on grass both times. On concrete or near the edge of raised decking could be very serious.

Once you have selected your patio table, chairs and possibly loungers, there are one or two other things that I think are essential to allowing the full enjoyment of your patio deck. For example, if you want to use your outdoor furniture in the evening you may find it chilly or you may be troubled by insects.

This need not be a problem. You can get a patio heater for quite a reasonable price. A gas patio heater will keep up to eight people lovely and warm. To complete your patio furniture set, you may want a mosquito trap of some kind.
